Chocolate double dip Thin Mint cookies Girl Scout style

 

Love those Girl Scout cookies? Want to have thin mints anytime you crave them. Crunchy minty chocolate taste,  believe it or not you can get the same taste using a fudge cake mix and a few ingredients. I did not make the cookies too thin because we like a bigger mint cookie.

 

Ingredients for cookie:

1  Box of Fudge cake mix

1/4 cup cake flour

2 tablespoon cocoa

1/4 cup melted butter

1 egg

5 tablespoons milk

1 teaspoon peppermint pure extract

 

ingredients for Chocolate coating:

1 bag (12 ounce) semi- sweet chocolate chips

3 tablespoon  + 1 teaspoon shortening

1 1/2  teaspoon peppermint extract

(for gloss)  a few edible wax chips (optional)

 

Directions:  Set Oven at 350 degrees

Combine cookie ingredients in a large bowl and mix well.  Chill in refrigerator for 1 hour.

Roll into little balls and flatten with bottom of a glass or cup.   Place on a cookie sheet with parchment paper.  Before baking use a wooden skewer to poke 5 holes on top of each cookie (like girl scout style) optional .

Bake for 12 minutes.  Turn oven off and let cookies  sit on the cookie sheet until cookies dry(gets a little hard for crunch) about 5-8 minutes.  Cool cookies for 10 minutes before dipping in chocolate mixture.

 

 

Directions for Chocolate :

Either use a microwave or stove top.
Stove top:
Add  chocolate chips in a sauce pan and 3 tablespoons shortening over a very low heat.  Stir and as soon as chips start to melt remove from heat  mix well than return to heat until smooth.  Start to dip cookies into chocolate using two forks to dip cookies. If chocolate star to harden return to a low heat add a dab of shortening.  Place chocolate dip cookie on wax paper.  After cookie;s chocolate dries  you can double dip in chocolate for an extra chocolate bite.
Microwave: Combine all ingredients, chocolate chips, shortening and peppermint extract in a  microwave safe glass bowl.  Heat at medium for 2 minutes, stop and stir return and heat for 1 minute, mix well and start to dip. Zap another 30 seconds  if chocolate is not smooth, continue until smooth. Once chocolate is smooth start to dip cookies into chocolate. Place on wax paper.  Chill chocolate  mint cookies  for 1/2 hour.
