I love Indian tea with cardamom and these cookies are perfect to have with any kind of tea or coffee. The cookies are crunchy and nutty with every bite.
ingredients:
2 cups all-purpose flour
1 cup sugar
1 teaspoon ground cardamom
1/2 teaspoon cinnamon
a big pinch of sea salt
1 cup sliced unsalted toasted almonds ( Trader Joe’s ) or walnuts, pecans. chopped into tiny pieces
1 1/2 sticks room temperature soft un salted butter
1 tablespoon vanilla extract
2 cups powder sugar for dusting cookies when done.
Directions: Pre-heat oven 350 bake until lightly golden brown ( 12-15 minutes)
Combine all dry ingredients in a large bowl, sugar, flour salt, cardamom, cinnamon and nuts.
Beat butter and vanilla until creamy and combine into dry ingredients.
Using your hands, roll dough into little balls and shape into crescent shapes or roll into a ball and flatten dough on a clean work surface and use a cookie cutter to cut into a round shape.
Place on a cookie sheet using parchment paper. Bake and cool cookies completely before dusting with powder sugar.
