Egg sandwich made with leftover hard boil Easter eggs This sandwich is very easy to make. A small sandwich is always nice with a bowl of soup.
Ingredients:
1 baguette
extra virgin olive oil fro drizzling
8 hard boiled eggs
1/4 cup of mayonnaise (add more if needed )
2 stalks of green onion chopped
2 small stalks of celery chopped
2 fresh tomatoes sliced
1 teaspoon of Dijon mustard
chopped chives finely chopped
1/2 teaspoon fresh lemon juice
salt and pepper to your liking
pickles (optional) serve on the side
In a medium saucepan bring water to a boil. Reduce heat, add eggs carefully. Cook for about 5 -6 minutes for hard boil eggs. Make sure eggs are covered in water.
When eggs are done transfer to a bowl with cold water, it will stop the cooking process and doing this you will not have that gray color around the yolk.
When eggs are cool and rinsed, peel shell off and chop eggs, place into a large bowl.
Add mayo, mustard, chopped celery, chives, lemon juce and chopped green onions. Mix well adding salt and pepper to your liking. When done cover with plastic wrap and refrigerate for about an hour before serving.
serve as a side dish during summer picnics.
This is how I like it, on a toasted baguette drizzle with extra virgin olive oil.
The sandwich can also be served warm for breakfast with a side of bacon! Excellent with my cucumber salad Recipe here–>Cucumber Salad recipe
