Cherry Pie with Apples made with a Vegan pie crust

This is a simple cherry and apple pie.  The crust is vegan but you can use your favorite pie crust recipe.

Ingredients:

1 can of cherries

3 granny smith apples(peel skin and cut)

2 teaspoons sugar

1  teaspoon cinnamon

1 egg white (not  used  on the vegan pie crust)

 

Vegan Pie crust recipe: 9 inch pie crust

1 teaspoon salt

2 cups all-purpose flour

3 tablespoons coconut oil

6 tablespoons canola oil or vegetable oil

6 tablespoons  cold water

 

Direction for pie crust:

In a mixing bowl,  add the flour and salt, mix well and set a side.

in another bowl add coconut oil, canola or vegetable oil  and water mix well.

Using your hands or a pastry blender add a few tablespoons of the oil and water mixture to the flour and salt mixture.

Blend well  until it form a dough.  Do not over mix or over work  the dough. When it form a ball,  wrap the dough  and refrigerate for 30 minutes to an hour.

 

When ready to roll ou the dough to make a pie crust,  lightly sprinkle some all-purpose flour on your work surface.  Using a rolling-pin, gently roll the dough and place the pir pan  over the rolled out dough to measure the size of the pie pan. Press the dough down with your hands,  using a fork  press out the air bubbles if any.

Bake the pie crust in the oven for about 15 minutes or until lightly golden brown. While the crust is baking, cut out stripes for the top of the pie crust.  As seem in the photo.

In a large bowl add the can cherries and cut up apples, mix well adding  1 teaspoon of sugar.

When the pie crust is done,  spoon the cherry mixture into the bake pie crust.  Cover the pie with a full pie crust ( in the middle of the dough if covering the whole pie , using a knife  cut to holes so the pie steam will be released)or have a pattern as shown in the photo.  Brush water and sugar mixture on each  strip and sprinkle with cinnamon and sugar.

Lemon Meringue Pie the old fashion way

Mile high Meringue

If you like a dessert with a taste of tartness this is the pie for you!  A friend gave me a basket of fresh lemons, so I decided to make a lemon pie.

Ingredients:
1 cup sugar
1/4 cup Kingsford’s corn starch
1 1/2 cups water
3 egg yolks slightly beaten
1/4 cup lemon juice (fresh lemon)
Grated peel of 1 lemon
1 tablespoon butter
1 baked  9 inch pie crust (recipe below)
For the Meringue4 egg whites
1/3 cup sugar
a pinch of Cream of Tartar

Pie crust recipe:
1  1/2 cups flour
1 tablespoons white sugar
1/2 teaspoon salt

6 tablespoons  chilled unsalted butter cut into pieces
3 tablespoons solid vegetable shorting chilled
4 + tablespoons ice water(more if needed)

Or use a pre-made pie crust

For the pie crust pre-heat oven at 400 degrees.

The pie crust dough:
Place all ingredients  in a large bowl  and mix well with a fork until the dough forms. Roll out the dough and place on the pie pan.
Mold and form the dough around the pie pan using your hands.  Poke holes with a fork around the center of the pie crust and on the sides.
Bake  15 minutes or until golden light brown.

Directions: Lemon Filling for Pie:
Oven at 350 degrees.

Combine 1 cup of sugar and corn starch in a medium sauce pan.  Stir in water.  Stir until mixture is smooth with no lumps.  Add egg yolks one at a time and stir well.
Place over a medium to low heat until it comes to a boil.  Remove from heat and add lemon juice,  lemon peel and butter, constantly stirring.
Pour into prepared pie crust,  using a spoon to smooth filling.

Directions for the Meringue

Beat egg whites with an electric beater in a bowl at high-speed.
When egg whites start to have foamy peaks,  add 1/3 cup of sugar little at a time.
Add a pinch of cream of tartar while whipping meringue into peaks.
Spread meringue over the lemon filling to seal pie, spread to  crust edge.
Bake for 15-20 minutes or until golden.

Cool  on a wire rack at room temperature for 30 minutes.
Refrigerate for 3 hours before serving.

Enjoy with your favorite tea or coffee.

Cherry mini turnovers President’s Day National Cherry Pie Day!

National cherry pie day and George Washington pie story,  it seems a perfect excuse to make anything with cherries!
In honor of President’s Day,  I made cherry turnover treats mini bite size, with different styles of shapes.  What is important is the pie crust, when rolling pie dough do not over flour,   sprinkle your work area lightly with flour and the result will be a flakey pie crust.
I tried many pie crust recipes before and this is one of the best.  Very easy cherry recipe,  makes a nice treat.  Takes about 30 minutes to make and 12-15 minutes to bake.
Cherry pie also reminds me of “Twin Peaks”,  television serial drama created by David Lynch and Mark Frost.  Before the show would start,  we had our cup of coffee and pie ready to enjoy, thanks to FBI agent Dale Cooper with his love for a good cherry pie!

ingredients for pie crust
Pie crust recipe:  Epicurean pie crust link
Ingredients: Pre-heat oven 350 Bake 12-15 minutes or until golden brown
2 cans of Comstock original Country Cherry COMSTOCK pie filling
1 egg white  to close turnover ( mix with 1/2 teaspoon water)
mixture  cinnamon and sugar as a sprinkle topping
Directions:
After making your pie dough,  roll dough to your desire shapes.  For mini turnover, add a tablespoon or teaspoon of cherries to your roll out dough.  Using a knife to cut your shapes of your cherry treats.   Fold dough over your cherries, using with pastry brush and brush along the edge of the dough,  using a small fork, press edges to close making sure cherry juice will not leak.  Place turnovers on a cookie sheet pan that is covered with parchment paper (optional) or  dust cookie sheet with flour.
You can also make mini cherry pies using a cupcake  pan. Grease and flour cupcake pan.   Using a medium circle cutter, cut shapes of circles in dough, and place cut dough into cupcake pan pressing lightly.  Add 2 tablespoons of cherries to each cup.
Make cut stars or cut another circle for the topping, as seen in the photo. Before  baking brush an egg white wash over each cherry treat and sprinkle cherry treats with cinnamon and sugar.

American Apple Pie

America is known for their apple pie.  A homemade fresh apple pie baking in the oven makes your kitchen smell heavenly.

Ingredients: Basic recipe for double pie crust

1 pie crust  double  per-made or homemade

2 1/2 cups all purpose flour

1/2 teaspoon salt

1 teaspoon sugar

2 stick butter cold cut in pieces

1/4 to 1/2 cup ice water

    1. PREPARE recipe for double crust pie. Roll out dough for bottom crust. Place in 9-inch pie plate. Press to fit without stretching dough. Trim even with pie plate. Do not bake.

If this pie crust calls for too much butter than use Cisco’s all vegetable shortening at

Prepare same as above for pie crust.

  • Double Crust classic crisco pie crust 
  • 6 medium Granny Smith apples
  • 3/4 cup sugar
  • 2 tablespoons Pillsbury BEST® All Purpose Flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter
  • 1 large egg white, lightly beaten
  • DECORATIVE CRUST
  • Single Crust
  • 1 large egg white, lightly beaten
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon sugar

 

Pie Filling ingredients:

4 lbs Granny Smith  green apples, Gala or Empire apples.

3 tablespoons brown sugar

1/3 cup  sugar

pinch of salt

3 tablespoon  all-purpose flour

2 tablespoons butter cut into small pieces

1/2 lemon  juice

1/2 – 1 teaspoon cinnamon (optional) according to your liking

Directions for Apple Filling:

Pre-heat oven at 375 for 10 minutes and reduce heat to 375 bake for 35 minutes or until crust turns golden brown and apples are tender.

Peel, core and slice apples. In a large bowl add 1/2 cup water and fresh lemon juice, mix well.  Place cut apples in liquid mixture so that apples do not turn brown.  Set a side.

In another bowl add sugar, flour, salt and cinnamon:  Mix mixture to combine.  Remove liquid from slice apples and pat dry with a paper towel adding apples slices to the dry ingredients.

Mix well and place in prepared unbaked pie crust pan.  Make sure you have enough sliced apples to make a mount in the center of the pie pan. Add a pat of butter on top of the apples(center).

Cover the apples with the second rolled out dough for a topping.

Optional: For a shiny pie crust

Brush with egg mixture wash :1 egg plus 1 tsp water, mix well  and brush top of the crust or brush with water and sprinkle a mixture of white sugar and cinnamon ( sprinkle before baking the apple pie).  You can also brush the pie crust with fresh cream or egg whites.  Using a knife cut a few slits in the center of the apple pie before baking. Make sure to cut slits for stream to escape,  not too big or the juices will spill out.
