Pizzelle Italian waffle cookies, light and crispy

 

 

These Italian cookies are very easy to make,  this is a very traditional Italian cookie.  Pizzelle are crisp and light.  You will need a pizzelle machine, easy to find at department stores and specialty store for baking.

I made three flavors of pizzelle cookies.  Vanilla and anise, chocolate vanilla and almond using almond meal.  You can also try lemon pizzelles.

These cookies can become sandwich cookies with nutella (a hazelnut Italian chocolate spread).

 

Ingredients: A basic  pizzelle recipe

3 eggs

1 3/4 cups all-purpose flour

1 stick butter

2 teaspoon baking soda

1 teaspoon vanilla

small pinch of salt

 

For Almond Pizzelle follow the above recipe

except add 1 cup almond meal plus 2 teaspoon almond pure extract (do not add vanilla extract)

For Chocolate pizzelle

all of the above basic recipe plus 3 tablespoons cocoa powder plus 1 more teaspoon vanilla pure extract

For Anise pizzelle cookies,

3 teaspoons anise seeds or more to your liking

For Lemon pizzelle all of the above, plus 2 teaspoon lemon  pure extract and fresh chopped lemon zest.

Dust lemon pizzelle with powder sugar.

You can also divide the above recipe and add the flavoring to your liking on the other half of the mixture.

In a large bowl mix eggs and sugar. Melt butter and cool.  Add Vanilla, cooled butter and the other flavors you desire(anise, lemon or vanilla).

Sift flour, bake powder into egg mixture. Batter will be stiff.

Drop about 2/3 teaspoon on each pizzelle pattern, green light will let you know it is done

Pizzelle are delightful with tea of coffee, light and crispy.
